Persiapan
Es Pisang Hijau Special
Bahan Dadar:

• 200 g tepung terigu
• 25 g tepung beras
• 25 g tepung kanji
• 300 ml santan dari 1 butir kelapa
• ½ sdt garam halus

Air daun suji:

• 100 ml air
• 10 lembar daun suji
• 3 lembar daun pandan

Bahan isi:

• 6  buah pisang raja,lalu kupas

Bahan Bubur:

• 100 g tepung beras
• 1 lt santan dari 1 butir kelapa
• 1 lembar daun pandan, potong-potong
• ½ sdt garam halus

Pelengkap:

• 200 ml syrup rasa coco pandan atau syrup frambozen
• 200 g agar-agar tawar yang direbus dengan santan dan pewarna merah, potong dadu
• 250 g serutan es batu

Cara Membuat:

1. Dadar: Tumbuk daun pandan dan daun suji dengan 100 ml air, peras sisihkan airnya.
2. Campur semua bahan dadar, aduk rata. Saring. Panaskan wajan datar anti lengket, tuang satu sendok sayur adonan. Masak hingga matang dan menjadi dadar tipis. Lakukan hingga adonan habis.
3. Ambil satu lembar adonan dadar, isi dengan 1 buah pisang. Gulung dan bungkus hingga pisang tertutup adonan dadar. Bungkus dengan daun pisang. Kukus selama 20 menit atau hingga pisang matang. Angkat, potong-potong. Sisihkan.
4. Bubur: Campur semua bahan bubur, aduk rata. Masak sambil terus diaduk-aduk hingga bubur matang dan tekstur mengental. Angkat. Sisihkan.
5. Penyelesaian: Siapkan mangkuk saji, masukkan bubur, potongan pisang hijau, potongan agar-agar dan es serut.
6. Sesaat sebelum disajikan siram atasnya dengan syrup coco pandan atau syrup frambozen. Hidangkan segera.
7. Untuk 9 Porsi

Tip :

• Air daun suji bisa diganti dengan ½ sdt pasta pandan atau 3 tetes pewarna makanan hijau.
